Garlic beans, Oven roasted tomatoes & blanched green w/ parsley tahini sauce for dinner.
Finally tried field roast Italian sausage. It was pretty good! Would have tasted better in a tomato sauce I think, but it had a lot of flavor and a nice texture. It is made with wheat gluten instead of soy. I cut it in half while I was cooking it so it would heat thoroughly, but I ended up slicing it up pretty small and mixing it in with the rice.
Gardein buffalo ‘wings’ over brown rice, and a spinach, tomato, cucumber and red onion salad with Asian sesame dressing. I already ate like half the salad before the pic :p.
