Last night’s dinner.

Gardein buffalo ‘wings’ in mini wraps with spinach, tomato and green onion.

Some of my meals I had while camping.

-Veggie sausage patties with foil pack hashbrowns, green pepper and onion.

-“Banana boat” consisting of banana roasted in foil, stuffed with natural peanut butter and mini vegan chocolate chips.

-refried bean wrap with guacamole, spinach, radish sprouts and hot sauce.

-baked beans in tomato sauce with veggie dog.

Going camping for 3 days… The top shelf is my camping veggie supply. Spinach, guacamole and sprouts to go in my wraps, some raw carrots, celery and cucumber to have with hummus, diced potato, green pepper and onion to try up for breakfast, and red pepper, tomato, zucchini, onion, mushrooms, eggplant and garlic to put in foil packs to cook in the coals. Prep work complete, now I can enjoy my mini-vacation and relax with a few beers.

Kinda stoked, they have a completely vegetarian food cart in disney’s animal kingdom. I think most or all of it is also vegan. I had the salad rolls with peanut sauce and they were pretty good. I know a lot of animal activists don’t like this park but it is better than most zoos.

Just emailed a restaurant I frequent telling them to add more veggie options to their menu. What was once a vegetarian pasta now has 3 kinds of meat in it. Even the artichoke dip has bacon. The fries are served with a beer mayonnaise. There is not a single vegan thing on the menu besides a plain salad, and I couldn’t find anything easily made vegetarian. This bar specializes in microbrewed beer, local foods and hormone-free meat and stuff, you’d think they’d cater a bit better to vegetarians and vegans. Jeesh.

I go there often because my buddy’s band plays there a lot, and it’s where we’re going for my work Christmas party tomorrow night. I can’t believe their menu updates only included more meat-heavy meals and like four different kinds of poutine.

Meat consumption down 12% since 2007. Every little bit counts - we ARE making a difference.

A few recent meals…

Roasted potato, carrot and onion with sauteed kale, celery, black beans and mushrooms.

Tofu scramble with turmeric, mustard seed, salt, pepper, onion, green pepper, mushroom and daiya.

Lettuce wraps with black beans, quinoa, celery, sesame seeds, mushrooms, onion, radish.

The question I actually get the most when people find out I’m vegan is “So, you don’t even eat fish?”

Seriously? That’s what you’ve come up with? I know a lot of people don’t understand veganism, but can’t you ask about cheese or something? I thought it was pretty obvious that even vegetarians don’t eat fish.

And last time I ate with my mom, she offered me bacon with my breakfast. I’m like… uhm. You guys are eating bacon, eggs and toast with butter, which is why I put Earth Balance on my toast and made a tofu scramble with lots of veggies. She responded with “Oh I thought sometimes you ate meat.”

Ugh. I like to be patient and informative, but sometimes I just think people are ignorant.

Hey guys, does anyone know a good alternative to Earth Balance? Even if I have to make it myself, I don’t mind so much - I’m almost finished the first container that I bought and although I enjoyed it, I’ve since learned about palm oil and the effects on the rainforest/animals inhabitating it and it is an ingredient I no longer want to buy.

Tonight’s dinner
I sauteed tomato, onion and 5 cloves of minced garlic in some Earth Balance. Then I added the juice and a few tomatoes from a can of tomatoes and let it simmer. I mixed this in with baked spaghetti squash, and served it alongside some leftover baked beans in tomato sauce.
Fantastic.
